Betty’s Browned Butter Mashed Potatoes Recipe
In this video, Betty demonstrates how to make fluffy and flavorful Browned Butter Mashed Potatoes. These make a great accompaniment to almost any meal; with the extra flavor from the browned butter, they are extra special! Ingredients: ¾ cup butter (1 ½ sticks) 4 pounds potatoes, peeled and sliced into 3/8-inch slices. (I used Idaho potatoes, but you may use any potatoes that cook and mash well.) 3 teaspoons salt 1 ¼ cup milk 1 teaspoon lemon juice ¼ teaspoon white pepper Place ¾ cup butter in a heavy saucepan over medium heat. Cook, stirring constantly, until butter begins to turn golden brown—about 8 minutes. Immediately remove from heat and pour into a Pyrex glass measuring cup. The butter will become overbrowned if allowed to sit in the hot saucepan. Reserve about 2 tablespoons of the browned butter in a Pyrex custard cup for use as a topping for the mashed potatoes when they are done. Place 4 pounds of peeled and sliced potatoes into a large pot and cover with water. Add 2 teaspoons salt and place over medium heat. When the potatoes come to a boil, reduce the heat and boil 20 minutes, or until tender. Drain the potatoes, discarding the potato water. Let potatoes sit for a few minutes, so that they will dry out a bit. Meanwhile, stir 1 teaspoon lemon juice into 1 1/4 cup milk. Now, mash the potatoes with a potato masher to desired consistency. @badmedgirl Yes, I almost always use a hand mixer for whipped potatoes. This time I was just trying to do something different for people who always use a potato masher for “mashed” potatoes. But, I much prefer a mixer!

@barbielovesmac100 You can add warmed chicken broth or vegetable broth in place of the milk. or more butter!

@cjucoder Thanks. I agree. I love seeing the black pepper on my food also. I think salt should be some sort of color too because we tend to over salt out dinner plates because we can’t see the salt coming out lol. I really wish salt was some sort of color too ; ) Smiles !

@cjucoder Thanks ; ) I thought that might be the reason behind the white pepper. Ok so I’m not going to bother buying the white pepper if black will work just fine. I like seeing the color of black pepper on my food because it adds color to the plate. Thanks for letting me know the different in the two. Smiles ; )))

@ohpineapples Oh, and just to elaborate, you can get whole white peppercorns also so you don’t need to use the pre-ground dust (Yuck). I already have two pepper grinders on my counter and since I can’t taste the difference in white pepper I am not going to invest in a third grinder. But, people smarter than me say white pepper is more attractive in some foods. To me, since I love pepper, seeing those little black specks make my heart race and I can’t wait to eat!

@ohpineapples There is a very tiny difference in taste between white and black pepper. I consider myself to have a good palate and I can’t taste the difference. Cooks mostly choose white over black when they don’t want to have black specks in the food. To me that is not worth buying another spice for. Personally, I would rather have freshly ground black pepper verses white powder in a shaker that Betty used any day. That is just my personal preference.

Hi Betty ! I’ve never heard of white pepper and this is the second time in one week I’ve heard about white pepper. Is there a taste difference between the two? Do they make white pepper white just so that you can’t see the white pepper in the food? I know it’s a strange question, but I really was wondering.
