Bitter Melon and Shrimp Stir-fry Recipe
This classic Chinese seafood recipe really brings out the nature goodness of the shrimp, paired with the tangy bitter melon burst with flavor, bitter melon and shrimp stir-fry recipe is wonderful served over rice.

Ingredients:
1/2-1 bitter melon, seeded and cut into 1-inch sections
7 oz./ 200 g shrimp, peeled, deveined, rinse well
3 slices ginger, peeled
1 tbsp. chopped scallion
1-2 tsp. salt, or to taste
2 tbsps. vegetable oil for stir-frying
Directions:
1. Preheat a wok over high heat for 1 minute, then heat 2 tbsps. vegetable oil to saute the scallion and ginger until aromatic, about 20 seconds, then stir fry bitter melon over medium heat for about 2-3 minutes.

2. Drain the shrimp well, then add into the wok in question, stir fry over high heat until pink.
3. Pour 1-2 cups water into the wok, let them simmer over medium heat for 15 minutes, salt as you would.

4. Dump into a warmed bowl and serve hot.
