BITTER MELON CURRY

This dry curry recipe is one instance where commercial Indian fish curry powder from Malaysia is acceptable. Sliced okra also works well for the vegetable.

1 bitter melon or 3 green bell peppers, chopped

1 heaping tablespoon Fish Curry Powder

2-3 tablespoons oil

Salt to taste

Fresh lime juice to taste

METHOD

Cut the bitter melon (if using) in half lengthwise then sliced each half across into fine slices. Soak the slices in salted water to remove the bitter taste. Mix with the curry powder.

Heat the oil in a pan and fry the bitter melon or chopped green bell pepper and curry powder until the vegetable is cooked and dry. Add salt and a squeeze of lime juice to taste and serve.
