Serves : 4
500g red sweet potatoes (boiled and mashed)
Fried in a little oil then ground
300g chicken meat
100g dried prawns
5 shallots (sliced)
5 cloves garlic (sliced)
1 teaspoon ground black pepper
15g chinese celery (shredded)
2 eggs (lightly beaten)
2 teaspoons coriander seeds (ground)
plain flour, to coat
oil for deep-frying
sugar and salt to taste
- In a large bowl, mix the sweet potatoes, ground ingredients, celery, black pepper, coriander and seasonings well.
- Shape into small balls then flatten slightly. Roll in flour. Then dip in the egg.
- Heat oil for deep-frying. Fry the patties in batches till golden brown.
- Serve with rice or as a satisfying snack.
