Citrus cola

600 ml hot water
2 oranges, zest only
2 limes, zest only
1 lemon, zest only
1 pinch ground cinnamon
1 pinch grated nutmeg
1/4 vanilla pods, seeds only
1/4 lavender flowers
2 thin slices ginger
1/2 tsp citric acid
600g caster sugar
soda water
1. Pour the hot water into a large saucepan and add all the ingredients except the sugar and soda water. Bring to the boil and continue boiling for 20 minutes.

2. Filter the infused water through a tea towel or muslin cloth, then pour back into the saucepan. Add the sugar while still hot and stir until dissolved.
3. Pour the syrup into a large jug and add the soda water – you will need 200ml of soda water for every 50ml of syrup. Stir together well, then serve over ice in tumblers.
