This is a famous Irish recipe for mashed potatoes and cabbage served as a fluffy pile with a well in the centre filled with melted butter so that you can dip each forkful into the butter before eating it.
450 Gram Cabbage, shredded (1lb)
450 Gram Potatoes, peeled and halved (1lb)
2 Leeks, finely chopped
150 ml Milk ( 1/4 pint)
Salt and freshly ground pepper
Pinch Ground mace
25 Gram Butter, melted (1 oz)
Boil the cabbage in salted water until cooked, drain well and keep warm. Place the potatoes and leeks in a pan with the milk. Bring to the boil, cover and simmer until cooked.
Mash the potatoes with the leeks and season. Add the cabbage to the potatoes and mix well. Spoon into a serving dish, make a hollow in the centre and pour in the melted butter.
