This reminds me a lot of the Sancocho stew that my family normally makes. Looks about the same but veerrrryyyy delicious! I would like to add, though, that the taste is millions times better in the winter but that’s because my family usually makes stews like nuclear hot.

I truly meant to give words of encouragement because I was worried that you were being bullied by your spouse (it does happen!) and I meant to be positive not mean. @iml109 Oh I feel so bad for you the way you phrased your comment! I understand, because fresh herbs make such a huge difference in the quality of food you make. First: Is hubby your boss or father? I’m assuming “no” so don’t you have as much say as him about what goes on in your house? Second: What specifically is hubby worried about? Water under the pots? Maybe promise to put the herb pots on a tray? In other words, talk to him about his SPECIFIC concerns about the plants. Fixable!

Whoa, this sounds outstanding! I wouldn’t simmer zucchini for an hour, it would be too mushy for me (personal preference). Otherwise I would love this! Maybe some green beans, mushrooms and any thing else hanging around in the fridge could be added. To make it prettier you could always add a smattering of green/red/yellow bell diced bell peppers to the top of the bowl along with fresh basil. It would be pretty and taste good too.
