Kimizu – Japanese Egg Yolk Sauce Recipe

This is a Japanese egg yolk sauce called kimizu. Kimi means egg yolks, and zu means vinegar. This sour sauce can be served with boiled shrimp, vegetables, chicken, and more.


Ingredients:
- 2 egg yolks
- 2 Tbsp rice vinegar
- 2 Tbsp sugar
- 3 Tbsp dashi soup
- *Karashi mustard
Preparation:
Put all ingredients in a bowl. Mix well. Place the bowl over hot water and heat the sauce, stiring constantly until thickened. Cool the sauce.*Makes 2-4 servings.
