This is another traditional dessert from Wales. You can use whatever fruit is available, apples or plums are nice.
65 Gram Sugar (2 1/2 oz)
25 Gram Butter (1 oz)
1 Lemon, zest only
450 ml Milk (3/4 pint)
175 Gram Fresh breadcrumbs (6 oz)
3 Eggs, separated
175 Gram Fruit, prepared (6 oz)
Place 25g (1 oz) sugar, butter, lemon zest and milk in a pan and bring to the boil. Stir in the breadcrumbs and leave to stand for 10 minutes.
Stir the egg yolks into the breadcrumb mixture and divide between 4 individual ovenproof dishes. Bake at 170 °C / 325 °F / Gas 3 for 30 minutes. Place a layer of fruit over the bread mixture. Whisk the egg whites until stiff, fold in the remaining sugar and swirl over the fruit. Bake for a further 15 minutes. Serve hot.
