PORK AND BAMBOO ROLLS
Pinch each of salt and pepper
1 tablespoon soy sauce
1 teaspoon sugar
2 teaspoons dry sherry
1 teaspoon ginger juice
1 teaspoon cornstarch
1 lb (500 g) pork or beef, sliced thin across the grain
2 oz (60 g) bacon, cut into strips of similar size to the meat
4 oz (125 g) pork liver, lightly steamed or poached and thinly sliced
4 oz (125 g) shredded bamboo shoots
METHOD
Mix together the salt and pepper, soy sauce, sugar, sherry, ginger juice, and cornstarch. Add the pork or beef and set aside to marinate for 30 minutes.
Spread each meat slice flat, place strips of bacon, liver and bamboo shoots over them, roll up and skewer with a toothpick. Heat a little oil in a pan and fry the rolls until they are brown and the meat is cooked. Serve with chili sauce.
