Puran Poli is associated with Maharashtra and I guess Gujrat which is in the west and not North India. North India reference is more for Punjab, UP, Haryana…

The mixture changed because it was heated. Remember that it was composed by yellow split peas (channa dal) + jiggery, which is raw palm sugar. So, although it was powder at first, when it was hot enough, the sugar in it just melted. Maybe you should wait a little longer before add water? I’m just guessing here…

i don’t understand how the mixture changed at 2:09. when i made it, it stayed like powder, so i added some water t make into a thick paste like yours.
what did i do wrong?

With Puran Poli, typically there is a curry made from the water taken out of the cooked dal, in maharashtra we call “KAT CURRY”, my favourite is Milk with ghee n sugar, or milk with jaggery added in it….Tastes yummy….!!!!

Hi Sanjay, Just curious that…what one can eat along with Puran Puri? Dal Fry or some potato preparation or paneer/chicken preparation…or one should eat puran-puri as is without anything gravy items.
