Red Berry Cheese
200 Gram Fromage frais (7 oz)
25 Gram Caster sugar (1 oz)
2 Tablespoon Redcurrant jelly
3 Tablespoon Thick natural yogurt
15 Gram Gelatine ( 1/2 oz)
60 ml Water (2 fl oz)
225 Gram Red berries, your choice; choose from strawberries, raspberries, redcurrants or tayberries (8 oz)
Beat fromage frais with sugar and redcurrant jelly.
Mix in the yogurt.
Melt the gelatine in warm water and add to the mixture.
Layer the yogurt mixture and berries in 4 tall glasses.
Chill until required.
Frozen berries work just as well. Sponge fingers are great to dip in. Omit the gelatine and you have a refreshing breakfast yogurt.
