RICE-FIELD EEL WITH FERMENTED BEANS â€“Chinese New Year Food Recipes, Best Dish of Family Banquet
2 rice-field eel, 1 green pepper, 1 red bell pepper, 1T minced garlic, 3T fermented black beans
1T cooking wine, 1T soy sauce, 1t sugar, a pinch of white pepper, 1/2T cornstarch water
1. Clean rice-field eel, and a little vinegar to clean of mucus, halve lengthwise and then cut into small sections. Rinse peppers, cut open, remove seeds. cut into diamond shape, rinse black beans, set aside.
2. Heat 2T oil and stir-fry rice-field eel, drizzle 1T cooking wine, stir well and remove.
3. Heat 2T oil, stir-fry minced garlic, black beans and peppers until fragrant, and rice-field eel and 4T water and all the remainder seasonings, stir-fry thoroughly and remove. Serve.
