These are simple cakes that children enjoy making.
225 Gram Self raising flour (8 oz)
110 Gram Butter (4 oz)
75 Gram Caster sugar (3 oz)
110 Gram Mixed dried fruit (4 oz)
1 Egg, beaten
2-4 Teaspoon Milk
Sift the flour into a bowl. Rub the butter into the flour until the mixture resembles fine breadcrumbs. Add the sugar and the fruit. Mix to a very stiff batter with the beaten egg and the milk.
Place 10 spoonfuls of the mixture, in rocky mounds, on a well-greased baking sheet (allow room between each one as they spread slightly). Bake at 200 °C / 400 °F / Gas 6 for 15-20 minutes. Cool on a wire rack.
