Seared snapper with tropical salsa

Ingredients

* 1 mango, diced
* 1/4 pineapples, diced
* 1 papaya, seeds removed and diced
* 1/2 red onion, diced
* 2 cloves garlic, minced
* 1 jalapeño pepper, diced
* 1 tbsp mint, chopped
* small bunch parsley, chopped
* 2 tbsp lemon juice
* 2 tsp orange juice
* 6 x 120 g snapper

Method
1. Mix all the ingredients except the fish in a large bowl.

2. Heat a non-sick frying pan over a high heat and cook the fish for about 2-3 minutes on each side. Serve hot from the pan with the salsa.
