Sencha Green Tea Cake

Ingredients:
- 2 Tbsp sencha green tea leaves
- 1/3 cup hot water, about 160- 170 degrees F
- 3 eggs
- 2/3 cup sugar
- 1/3 cup vegetable oil
- 1 1/3 cup flour
- 1 1/2 tsp baking powder
Preparation:
Put 1 1/2 Tbsp of sencha green tea leaves in a tea pot. Pour 1/3 cup of hot water over the tea leaves and brew for a minute. Pour green tea into a small bowl and let it cool. Meanwhile, line a 8-inch round cake pan with baking wax papers. Preheat oven to 360 degrees F. Combine vegetable oil and green tea in the bowl. Whisk eggs well in a large bowl, adding sugar gradually. Sift flour, baking powder, and 1/2 Tbsp of green tea leaves into another bowl. Add half of the flour mixture into egg mixture and stir lightly. Add half of the green tea and oil mixture into the bowl and stir. Add the rest of flour mixture into the batter and stir lightly. Further, add the rest of green tea and oil mixture into the batter and mix well. Pour the batter into the cake pan. Bake in preheated 360 degrees F oven for about 35-45 minutes.
