In this recipe I have used a packet of prepared shark fin. This is by far the simplest way and I recommend it.

Roe from 4 crabs and 1 egg, or 2 eggs

3 tablespoons water

4 cups (1 liter) chicken stock

1 tablespoon light soy sauce

1 teaspoon salt

Pinch of pepper

Sugar to taste (optional)

1 teaspoon sesame oil

4 tablespoons cornstarch

5 tablespoons water

1 tablespoon oil

1 slice fresh ginger root, peeled and chopped

1 packet fully prepares shark fin, soaked in warm water for 20 minutes to 1 hour and then drained-about 2 cups (500 g)

3½ oz (100 g) cooked chicken breast, finely slices (optional)

6 oz (175 g) crab meat
