Special Swede

This is terrific when added to a traditional bubble and squeak recipe. A little nutmeg grated over the top of the dish adds a good aroma and taste.
Serves: 4
1 Large Swede, peeled and chopped
1 Large Onion, sliced
1 Tablespoon Oil
25 Gram Butter (1 oz)
2 Dessert apples, cored and chopped
Seasoning, to taste
Method
Boil the swede until tender; about 20 minutes and drain.
Meanwhile, fry the onion in the oil and after 2 minutes add the butter and apples.
Cook for 10 minutes on a medium heat.
Roughly mash the swede and add to the pan. Season, stir well and serve
