Spare ribs chopped into bite-sized pieces

Thin coconut milk

Thick coconut milk

Cooking oil

Ground and combine

Shallots

Garlic

Piece ginger

Bird’s eye chilies

Chili paste

Meat curry powder

Coriander powder

Fennel powder

Cumin powder

Candlenuts

Prawn paste stock granules (Belacan)

Curry leaves

Finely chopped ginger bud

Polygonum leaves

Cardamoms

Star anise

Cloves

Cinnamon Stick

Salt

Sugar

Chicken stock granules

Method :

  • Heat the cooking oil in the pot and fry the grounded and combined spices (A) and (B) until fragrant.
  • Add spare ribs and a little thin coconut milk.
  • Stir-fry until meat is well coated with spices.
  • Add remaining thin coconut milk and bring to a simmer.
  • Cook until meat is almost tender.
  • Put in thick coconut milk and seasoning.
  • Continue to cook over a gentle heat until gravy is thick.
  • Serve with steam rice.
