STIR-FRIED TOMATOES WITH BLACK BEANS
This dish is also good using sliced silverbeet instead of tomatoes. It goes well with Ginger Beef.
1 tablespoon Chinese black beans
1 tablespoon oil
1 lb (500 g) tomatoes, coarsely chopped
Sliced green onions for garnish
Wash the black beans, drain and mash them slightly. Heat the oil in a wok, add the beans and fry for 1 minute. Add the tomatoes and stir-fly until cooked but not too soft. Serve garnished with sliced green onions.
