Sweet Red Chili Chicken
The heat of Thai red chilies is mellowed by the sugar and vinegar in the sauce. Soy sauce adds just the right amount of salt to mix all the flavors into a complex and satisfying glazed chicken.
1/2 cup Sweet Red Chili Sauce
2 tablespoons vegetable oil
2 tablespoons soy sauce
1 medium onion, thinly sliced
1 tablespoon minced garlic
1 1/2 lb boneless chicken breasts
4 scallions, chopped
Optional: cooked Jasmine Rice
1. In a large skillet, heat Sweet Red Chili Sauce, oil, soy sauce, onion and garlic over medium heat. Stirring, bring to a boil and cook 2-3 minutes.
2. While sauce is cooking, thinly slice chicken across grain.
3. Add chicken and scallions to sauce. SautÃ© until chicken is cooked through (opaque), about 3-5 minutes and well mixed with sauce. Serve with cooked Jasmine Rice.
