Tartare Sauce

Serve this sauce with fried fish dishes.
1 Teaspoon Fresh tarragon or chives, chopped
2 Teaspoon Capers, chopped
2 Teaspoon Gherkins, chopped
2 Teaspoon Fresh parsley, chopped
1 Tablespoon Lemon juice
175 ml Mayonnaise (6 fl oz)
Method
Mix all the ingredients together.
Allow to stand for at least 1 hour before serving, to allow the flavours to blend.
Makes 225 ml (8 fl oz)
You can use tarragon vinegar instead of the lemon juice.
