Tuna Tomato Recipe
his easy recipe features a delicious contrast between sweet tomato and meaty tuna. It is perfect when you want something healthy, but still satisfying.

7 oz. tuna
1 olive, chopped
1 sprig of fresh coriander leave
1 stalk scallion, chopped
2 tbsps. mayonnaise
1 tbsp. ground black pepper
1. In a bowl, combine tuna, chopped olive, chopped scallion, ground black pepper and mayonnaise, mix well.
2. Rinse tomato well, scoop out the seeds with a spoon, reserve in a bowl for later use.
3. Fill each tomato with 2-3 tbsps. tuna and mayonnaise mixture.
4. Arrange tomatoes on a plate, top with a sprinkling of tomato juice, garnishing with a few sprigs of fresh coriander leaves before serving.
