White Chocolate Chunks

These look like giant snowflakes and are fun to serve at parties. The pan will be extremely hot as the corn starts popping so be careful. It takes at least half an hour to cool down. Best eaten the day they are made.

Ingredients

Serves: 4
2 Teaspoon Sunflower oil
3 Tablespoon Popcorn kernels
300 Gram White chocolate (10 oz), broken into small pieces

Method

Place the oil in a large saucepan with a lid. When the oil is warm add the kernels. Coat the kernels in the oil quickly and cover the pan. Cook for about 4 – 5 minutes until you hear the corn kernels popping, then turn off the heat but keep covered.
Melt the chocolate in a large bowl. Tip the corn into the chocolate and mix well until the kernels are coated. Spoon the popcorn in chunks onto greaseproof paper and leave for about 1 hour until set.
